What is Brisket?

A brisket is a piece of meat cut from the breast of a cow or veal — the whole brisket weight is between 10 to 16 pounds. A brisket is comprised of two parts, the first cut is called the flat, and the second cut is called the deckle. If you want to smoke a piece of the brisket, the flat is the best choice because it is easier to get great results.

There is a large amount of connective tissue in a brisket, which means to get a quality product, you have to cook is low and slow. Because of that, brisket lends itself well to low oven temperature bakes, slow cookers, and, most of all, smokers.

Every year the demand for brisket is increasing, as more home cooks learn how to master brisket. A simple smoke can yield a great brisket, and every day the list of recipes continues to grow.
