What is Brisket?

A brisket is a piece of meat cut from the breast of a cow or veal — the whole brisket weight is between 10 to 16 pounds. In this collection of recipes, we will start with a few varieties on how to make a brisket. Cooking times may seem a little short but keep in mind the recipes only call for the flat. If you plan on using the deckle or the whole brisket you will need to add time to match the size of your brisket.

The recipes near the end of this article are focused on cooked (smoked) brisket or leftovers. Never be worried about making too much brisket because it tends to disappear.

1. Old-fashioned Beef Brisket.

This recipe will make you fall in love with this classical dish again. Once you eat it, you can remember the old winter nights or the nostalgic holiday nights with your family. Classic beef brisket consists of tender beef brisket with rich gravy, besides melting potatoes and carrots.

The first secret ingredient in this classic meal is rich gravy. This recipe needs a lot of liquid. Thus, you can add broth or red wine. The second secret is ketchup and tomato paste to add sweetness. In this recipe, we use a pellet smoker. However, a slow cooker will work well, but you will miss the yummy smoky flavors.

 It serves 6 to 8 people.


  1. Buy 3 pounds of beef brisket (flat)
  2. Skip browning the beef brisket
  3. Cook the brisket on low heat for 6 to 8 hours.

What do you need?

  • 3 pounds of beef brisket. (flat)
  • 2 teaspoons of salt.
  • 3 tablespoons of olive oil.
  • 3 large onions, sliced
  • 6 cloves of garlic, minced
  • 1 teaspoon of black pepper.
  • 1 teaspoon of smoked paprika.
  • 1 teaspoon of thyme.
  • 1 teaspoon of oregano.
  • 2 cups of beef broth(red wine or cooking sherry).
  • 1/2 cup of ketchup.
  • 1/2 cup of light brown sugar.
  • 1 tablespoon of tomato paste
  • 1 pound of red potatoes chopped into 1-inch pieces.

How to make it?

  • Preheat your pellet smoker to 250 F.
  • Rub the brisket with 1 teaspoon of salt and.
  • Set it in a roasting pan in your smoker.
  • Heat the olive oil in a large frying pan over medium heat.
  • Put the slice of onions and in the pan and fry them until brown and soft for 8 minutes
  • Add the minced garlic and cook until tender for 2 minutes.
  • Put smoked paprika, black pepper, thyme, oregano, and salt (1 teaspoon) to the tender onions and garlic.
  • Cover the brisket with the onions and garlic, spread as evenly as possible.
  • Put the beef broth(or wine) in the pan over medium-high heat and then add ketchup, brown sugar, and tomato paste.
  • Pour the mixture of sauce over the onions and brisket.
  • Put potatoes and carrots around the brisket.
  • Cover with a foil tent and cook for 6 to 8 hours.
  • Serve the beef brisket with the potatoes, carrots, a big tablespoon of cooked onion, and sauce.
  • You can make a gravy with the sauce by adding a cornstarch base thickener and heating (1/2cup cold broth mixed with 2 tbs cornstarch)

 2. Smoked Brisket with Onion and Garlic.

In the smoked brisket with onion and garlic recipe, the primary step is to rub the brisket with onion and garlic one night ahead. Then, cook it in the electric smoker for 8 to 9 hours to have a barbecued brisket.

What do you need?

  • 7 to 10 pounds of brisket.
  • ¼ cup of minced garlic.
  • ¼ cup of minced onion.
  • 2 tbs lemon zest
  • 2 tbs of garlic powder.
  • 2 tbs of onion powder.

  • 2 tbs of pepper.

 How to make smoked brisket with onion and garlic?

  • One night ahead, remove the fat from brisket(trim).
  • Rub the brisket with all ingredients.
  • Place the brisket in the refrigerator overnight or for 10 hours.
  • In the morning, take the brisket out from the refrigerator.
  • Let it set out for 1 hour.
  • Preheat your electric smoker to about 275 F.
  • Remove brisket until the internal meat temperature reaches 165 F, roughly 4 hours.
  • Tightly wrap the brisket with aluminum foil.
  • Put it back on the smoker.
  • Cook it until the internal meat temperature reaches 200 F, roughly 3 hours.
  • Let it cool for 1/2 hour before serve.

What do you need?

  • 6 to 8 pounds of fresh brisket

How to make the dry rub:

  • 3 tablespoons of paprika.
  • 2 teaspoons of salt.
  • 2 teaspoons of garlic powder.
  • 2 teaspoons of pepper.
  • 1 teaspoon of dry mustard.
  • 1 teaspoon of oregano.
  • 1/2 teaspoon of chili powder.

 How to make the barbecue sauce:

  • 1 cup of brown sugar.
  • 2 cups of ketchup.
  • 1 cup of pineapple juice.
  • 1/2 cup of light corn syrup.
  • 1/2 cup of chopped onion.
  • 1/2 cup of apple juice.
  • 3 tablespoons of hot pepper sauce (tobacco or frank’s).

How to make smoked brisket with barbecue sauce?

  • Put the seasonings in the bowl and mix them
  • Rub the brisket with 3 tablespoons of seasonings.
  • In a large bowl add the sauce ingredients and stir them well until the brown sugar dissolves.
  • Put the brisket in a large resealable plastic bag and pour 2 cups of sauce in it.
  • Put the bagged brisket in the fridge overnight.
  • Put the remaining sauce aside in a bowl.
  • Preheat your electric smoker to 275 F.
  • Place brisket in the smoker with maximum smoke for 1 hour.
  • Next, put the brisket in a roasting pan and pour 4 cups of sauce over it.
  • Put the roasting pan with the brisket back in the smoker of your oven for 4 hours at 250 F.

4. Brisket with Caramelized Onion

This recipe is also called a “Jewish brisket” recipe. According to Cohen, there are two Jewish brisket schools one calls for adding tomato, and the other does not. In this recipe, we add caramelized onion instead of tomatoes, which will give us the same level of sweetness as the tomatoes.

It takes 25 minutes to prepare, 4 hours to cook, and it serves eight people. While this recipe can easily be cooked in a pellet or offset smoker, it is based on an oven recipe.

What do you need?

  • 3 pounds of brisket.
  • 1 teaspoon of Kosher salt.
  • 1 teaspoon of black pepper.
  • 3 tablespoons of olive oil
  • 12 cloves of garlic, peeled.
  • 5 medium yellow onion, sliced.
  • 1 cup of sherry wine.
  • 3 cups of beef gravy.
  • 1 teaspoon of fresh rosemary.
  • 1 teaspoon of fresh thyme.

How to make brisket with a caramelized onion?

  • Preheat your pellet smoker to 350 F
  • Rub the brisket with seasoning (salt and pepper)
  • Put the oil in a large skillet and heat it over medium heat.
  • Put the brisket in the skillet and sear it until entirely brown. It takes 20 to 25 minutes.
  • Add onion and garlic to a roasting pan and put it in the pellet smoker, reduce the heat
  • Stir every 5 minutes until soft and caramelized, roughly 25 to 30 minutes.
  • Add sherry wine, then beef gravy to the roasting pan, season with salt and black pepper.
  • Put the brown brisket in the roasting pan with caramelized onion
  • Add fresh rosemary and thyme.
  • Cover with a foil tent and cook it in the pellet smoker for 3 hours until tender.
  • Take it out of the pellet smoker and let cool.
  • Then, refrigerate overnight.
  • In the next day, cut the brisket into 1/4-inch
  • Put it in the oven to warm over medium heat, 285 F.

5. Smoked Potatoes in Electric Smoker with Brisket.

This recipe contains potatoes, cheese, and slices of brisket to make this a meal. The technique of smoking potato in the electric smoker will make the potato crispy and tasty. It’s recommended to be served hot but will be great served as a cold dish.

What do you need?

  • 3 lbs cooked chopped brisket.
  • 3 potatoes.
  • A spray can olive oil.
  • 1 and 1/2 cup of Cheddar Cheese.
  • 1/2 cup of melted butter.
  • 1 pound of chopped brisket.
  • 1/2 cup of heavy whipping cream.
  • 1/2 cup of sour cream.
  • 1/4 teaspoon of salt.
  • 1/4 teaspoon of black pepper.
  • 3 tablespoons of olive oil.
  • 1 tablespoon of minced garlic.

How to make smoked potatoes in an electric smoker?

  • Wash potatoes and allow them to dry.
  • Poke them by a fork.
  • Spray with olive oil and lightly sprinkle with salt
  • Smoke the potatoes in the electric smoker for at least 2 hours at 275 F.
  • Then, take the potatoes out of the smoker.
  • Dice the potatoes in large chunks.
  • Mix about ½ a cooked potato, melted butter, heavy whipping cream, sour cream, salt, and black pepper in a large bowl.
  • Add diced potatoes, chopped brisket, and cheddars cheese to sauce mixture.
  • Refrigerate if you plan to serve cold or,
  • To serve hot place mixture in a roasting pan and smoke for an additional 30 minutes to heat and add an extra smoky flavor.

6. Smoked Brisket Burger 

Who doesn’t love a good burger recipe? It is the national meal of some countries such as the United States. When you add new ingredients such as smoked brisket to a traditional burger, you will find yourself enjoying yet another fascinating creation of this adored food.


You can smoke the brisket as explained above in the onion and garlic recipe because it adds loads of flavor.

What do you need?

  • 1 pound of smoked brisket(cooked).
  • 2 pounds of ground beef.
  • 2 cups of potatoes cooked, cooled,  and shredded.
  • 1/2 cup fine diced onion.
  • 1 egg, beaten before adding.
  • 1 tbs black pepper.
  • ½ tbs salt.

How to make it?

  • Mix all ingredients, then form the patties
  • Place the burger patties in the smoker on 275 F for 1 hour with medium smoke.
  • Transfer burgers to a grill or cast-iron skillet on high until the edges are crisp.
  • Rest your burgers for 5 minutes, then dress them as usual with the addition of some barbecue sauce.

7. Sliced Brisket with Eggs(Sunday favorite).

This dish is simple and easy to cook. It doesn’t take a lot of time in cooking or preparation if you have precooked the brisket(aka, leftovers). The recipe above for onion and garlic brisket will add great flavor, but you can also use our basic brisket recipe and be quite happy with the taste.

Preparation takes 15 minutes, cooking takes 25 minutes, and it serves 4 to 5 people.

What do you need?

  • 3 lbs of brown potatoes(russet), parboiled and diced.
  • 2 cups of chopped brisket (cooked).
  • 1 onion, diced.
  • 1 red  bell pepper, diced
  • 2 teaspoons of minced garlic.
  • 2 tablespoon of olive oil.
  • 1 teaspoon of salt.
  • 1/2 teaspoons olive oil.
  • 5 to 6 large eggs.

How to make sliced brisket with eggs?

  • Put olive oil in a large pan and heat it.
  • Add the onion in the pan over medium heat for 3 minutes until it is soft.
  • Put diced red pepper and minced garlic.
  • Add diced potatoes and cook them for 15 minutes.
  • Cut the brisket into large pieces, just under ½ inch thick by 1 inch long.
  • Add the pieces to the pan with potatoes, peppers, and garlic.
  • Add salt and black pepper. Then, cook until brisket and potatoes start to crisp.
  • Add eggs and mix, turn to cook the eggs on all sides.
  • Finally, put onto a plate and top with salsa to serve or warm diced onions and tomatoes.
  • Note: I will cook the eggs in the very center of the pan to share flavors but not completely mix with the other items.
